A couple of GOOD easy dinners to make

Hoppin' John

2 or 3 Diced Tomatoes (watch the sodium if you use canned tomatoes)

1/2 clove Garlic (this is also to taste, I like garlic)

1 cup cooked Brown Rice (get a rice cooker it is super easy, long grain Texmati? rice is good)

1 can Black Beans (rinse the beans)

Juice from 1/4 Lime



OPTIONAL:
Jalapenos chopped added to taste
1 TBLS chopped Cilantro (I don't like Cilantro)

To Serve:
Heat Tomatoes and Garlic (on the stove or in microwave)
Heat Black Beans
Layer on plate; Rice, Beans, Tomato/Garlic then sprinkle Cilantro and Jalapenos on top

Enjoy!!

285 Calories if you eat 1/2 cup of rice with 1/2 cup of beans with 2 medium tomatoes

Fish Tacos (these are great even if it sounds not so great. and you don't have to use a taco shell just make the plate.)

Get the frozen Tilapia comes in a pack of 6 filets. 1 filet = 3 ozs.

1/2 Tilapia Fillet
1/4 Cup cooked Brown Rice
1/2 cup fresh spinach (rinse the prewashed bag of spinach)
1 Medium Tomato or use Salsa
1Tbls grated cheese
2 Taco Shell


Thaw Fish
Cook fish in broiler. Or cook fish over medium heat in pan with light olive oil. Sprinkle with Taco Seasoning (very light, maybe 1/4 tsp per filet).
Cook 2 minutes flip fillet add 1/4 cup water to pan. Cover with lid and cook 2 more minutes. Remove from Heat. You are done!

Layer rice, fish, spinach, cheese salsa. Add cilantro and Jalapeno and Black Beans if you like. Little squeeze of Lime juice.

EAT

2 Tacos with the Beans = 340 calories

YOU CAN"T BEAT IT!!! Fewer calories leave off the beans. So you have 2 meals that you use the Black Bean, Rice, Tomato and herbs make 2 Totally different meals. Easy shopping makes an inexpensive weeks worth of meals.

I could do the tacos. They sound good.

I am soooooo hungry lately!!!!! Almonds don't even help. Will power holds up most of the time, and I have been getting at least 240 minutes on the treadmill for the last 2 weeks. Had to pick up the pace and include an incline on some days. Hunger, please go away......!!!!
