Boy we're really cooking now!

Mushroom Quesadillas - 79 calories each!

Serves 6; 2 wedges per serving
What makes these finger foods so easy to make? You just saute a few ingredients, assemble the quesadillas, and bake them in the oven. Team them with low-sodium salsa.

Ingredients
Vegetable oil spray
8 ounces sliced fresh mushrooms
1/2 medium onion, thinly sliced and separated into rings
1 teaspoon bottled minced garlic
3 tablespoons chopped fresh cilantro
3 8-inch whole-wheat flour tortillas
6 tablespoons shredded low-fat Monterey Jack cheese with jalapeƱo peppers or low-fat Cheddar cheese

If you like desserts, this a low fat one....
buy a prepared angel food cake- tear it into pieces. Mix fresh strawberries, cool whip, and yogurt...... it's good.

I was talking to a friend of mine, in her 50's, one of the healthiest people I know. She's always known the things that are finally sinking in to me on the plan. EAT REAL FOOD! She gave me an idea that I am definitely going to try. She and her husband fire up the grill every so often and cook things like chicken breast, lean burgers, etc. They grill a bunch and then individually wrap and freeze so they have stuff in the freezer for several weeks. She just pops what she wants in the microwave. So much easier to do a bunch at once and to have it ready when you need it. For me I think it will keep me from the problem of stopping for something because there isn't anything ready quickly/easily at home.
